這原本是一首中古時期傳唱下來的英國的傳統民謠，歌詞包括了許多傳頌街頭巷尾的詩句，被歸類為 謎歌Riddle Song，是一種男女含蓄表達愛意詩句。
詞中提到的荷蘭芹、鼠尾草、迷迭香和百里香(Parsley, sage, rosemary and thyme)等四種香草植物，各有不同的愛情代表意義。荷蘭芹代表考驗，鼠尾草象徵力量，迷迭香表示忠貞、愛與紀念，而百里香則是勇氣。
賽門Simon與葛芳柯 Garfunkels 二重唱在1966年時將此曲翻唱，使之成為最膾炙人口的名曲之一。

氣味smell
嗅覺是一種很奇妙的感官，人的鼻子可以辨別10,000種以上的氣味，透各種氣味，我們能以刺激食慾感受美味，得知恐懼避開危險，同時也是記憶重要的連結，在中文裡，我們稱思想作風相同、彼此很合得來的人為”氣味相投”；嗜好怪癖、與眾不同的人叫”逐臭之夫”；好名聲永遠流傳謂”萬世流芳”、死後留下惡名的是”遺臭萬年”，可見氣味深深影響著我們對事情的喜愛與否，如斯卡伯勒市集Scarborough fair歌詞一再提到四種香草Parsley, sage, rosemary and thyme荷蘭芹、鼠尾草、迷迭香和百里香 就是一種馨香的記憶。

 以下是關嗅覺的英文字詞簡介:

 3.表達氣味的名詞:
  smell 氣味 fragrance各種令人愉悅的香味  scent 香味或氣味
aroma 芳香(指植物，合成香料及食物的香味)
  odor讓人感到不愉快的氣味或表達獨特的氣味
例: The air is filling with the smell of lavender.空氣中瀰漫著薰衣草的味道
   The herb spreads their fragrance far and wide.
   這藥草的芳香散發到四面八方。
   The scent of the roses was in the air. 玫瑰花的香氣散發在空中。
   We sniffed the aroma of coffee. 我們聞到了咖啡的香味。
   The flowers give off an strange odor.這些花散發出一種怪味。

4.和氣味有關的英文諺語:
  a. smell a rat 感到事有蹊蹺
   I smelt a rat when he told me that he could help me get a teaching job in the university.

有人說:”上帝開了一間藥房，只賣蔬果不賣藥”，的確，對身體最好的補品不在藥店裡，而是存在各式各樣的天然植物中。
除了蔬果外，香料及香草類植物(fragrant herb)也是上帝藥房中的上好藥材，它們除了可以讓食物更美味與幫助消化吸收外、從香料植物萃取的精油與乾燥香料，是重要天然芳香劑，這些香氣有的可以殺菌、驅蟲，有的可以提神醒腦，對人體健康非常有益，而根據科學研究，嗅覺可能是最能夠喚起人類記憶的感官，氣味可以引起伴隨記憶的某種情緒。
本單元歌曲 斯卡伯勒市Scarborough fair作者用了四種香草--- Parsley荷蘭芹, sage鼠尾草, rosemary迷迭香 和 thyme百里香來喚起愛人的記憶，我想大概就是一種療癒香氣嗅覺記憶的綜合運用吧!

有一首很有名的以色列情歌 Érev shel shoshaním (Evening of roses)， 與Scarborough fair有著異曲同工的療癒之效，玫瑰含有珍貴的芳香精油，詞曲令人陶醉，雖然以希伯來語演唱，在歐美依然大受歡迎。
台灣在1973年由楊芳儀、徐曉菁演唱，張慶三填詞的民歌夜玫瑰，就是翻唱自這首Érev shel shoshaním (Evening of roses)。
